Guziya is a popular Indian sweet that is typically prepared during festivals and special occasions. Here's a recipe for making guziya at home:
Ingredients:
For the dough:
- 2 cups all-purpose flour
- 1/2 cup ghee or clarified butter
- A pinch of salt
- Water, as needed
For the filling:
- 1 cup grated khoya or mawa (dried milk solids)
- 1/2 cup powdered sugar
- 1/2 tsp cardamom powder
- 1/4 cup chopped nuts (almonds, pistachios, cashews)
- 1 tbsp raisins
Oil or ghee, for frying
For the sugar syrup:
- 1 cup sugar
- 1 cup water
- A few saffron strands (optional)
Instructions:
To make the dough, sift the flour and salt together in a mixing bowl. Add the ghee and rub it into the flour mixture until it resembles coarse breadcrumbs.
Add water gradually, a little at a time, and knead the dough until it becomes smooth and pliable. Cover the dough with a damp cloth and let it rest for 30 minutes.
To make the filling, heat a non-stick pan on medium heat and add the grated khoya. Cook the khoya, stirring continuously, until it turns light brown in color.
Add the powdered sugar, cardamom powder, chopped nuts, and raisins to the pan. Mix well and cook for another 2-3 minutes until the mixture comes together like a dough.
Remove the pan from heat and let the filling cool to room temperature.
To make the sugar syrup, combine the sugar and water in a saucepan and heat on medium-high heat. Bring the mixture to a boil, stirring continuously until the sugar dissolves completely. Add the saffron strands and let the syrup simmer for 5-6 minutes until it thickens slightly. Remove from heat and keep aside.
Roll out the dough into thin circles, approximately 3-4 inches in diameter. Place a spoonful of the filling in the center of each circle and fold it in half, pressing the edges together to seal the gujiya.
Heat oil or ghee in a deep frying pan on medium heat. Once hot, add the gujiyas and fry until they turn golden brown in color. Remove from the oil and place on a paper towel to absorb any excess oil.
Dip the fried gujiyas in the sugar syrup, making sure to coat them completely. Place the gujiyas on a wire rack to cool and let the sugar syrup set.
Your gujiyas are now ready to be served! Enjoy the delicious and sweet treat with your family and friends.
